Slow-Cooked Bacon-Wrapped Pork Tenderloin with Rainbow Chard Recipe

There's something incredibly rewarding about cooking a meal sourced from your own farm. Today's recipe features our very own pork tenderloin, wrapped lovingly in bacon and slow-cooked to perfection. Paired with fresh rainbow chard straight from the garden, this meal embodies the spirit of homesteading and farm-to-table living.
Ingredients:
1 pork tenderloin (ours is farm-raised!)
6-8 slices of bacon
1/4 cup brown sugar
Sea salt, to taste
Freshly ground black pepper, to taste
4 cloves garlic, minced
1 medium onion, sliced
1 large bunch rainbow chard (or your favorite hearty greens), roughly chopped
Instructions:
1. Prepare Your Pork:
Generously season your pork tenderloin with sea salt and freshly ground black pepper.
Sprinkle brown sugar evenly over the pork.
Wrap the pork tenderloin with slices of bacon, ensuring it's nicely covered.
2. Layer Flavors in Your Slow Cooker:
Place the bacon-wrapped tenderloin into your crockpot.
Add minced garlic and sliced onions around and over the pork.
3. Slow Cook to Perfection:
Cook on low for 4 hours, allowing the flavors to meld beautifully.
4. Add Your Greens:
With 2 hours remaining, add the roughly chopped rainbow chard into the crockpot, gently stirring it around the pork.
5. Finish and Enjoy:
Continue cooking for another 2 hours until the pork is tender and the greens are perfectly wilted.
